Hello, my dear Steemians! Here is an easy special recipe of marinated bacon provided by my younger brother @xiaoshancun for everyone to try at home. Just by looking at the photos you know it’s yummy.

In my hometown, the marinated bacon is one of the traditional foods. When we were just kids, looking forward to spending the Spring Festival, we were actually hungry for the delicious foods which made the mouth watery, especially the marinated bacon hung under the eaves.

Every one has one’s own unique method for making marinated bacon, salty or sweet, by adding more or less salt depending one’s taste.

The specialty dish developed by my brother has been listed in the directory of local snacks.

Streaky pork is the preferred source, and below is the making method, taking the amount of 5km as an example.

Cut the pork into stripes, about 4cm-5cm in width, which is convenient for pickling and drying. If you like spicy food, you may add the dried pepper mince into it.

Ingredients:
Soybean sauce, 1000 grams
Mushroom dark soy sauce, 500 grams
Sugar, 100 grams
Monosodium glutamate, 20 grams
Wine, 250 grams
Salt, 50-100 grams

Add all the above ingredients into the meat which is to be pickled, and stir by hand for several times, until all kinds of spices can be evenly distributed. Afterwards stir once every other day. About ten days later, when all spices are nearly absorbed, drain the meat and hang up to dry them out in the shade for three or five days.

Cook one or two strips in a steamer for half an hour, then you can enjoy the delicious food you’ve made by yourself.

Shigandang of Mount Tai is the succession and development of Sigandang. The consuetude of Shigandang of Mount Tai is the national non-material cultural heritage. It is also a natural folk- custom of China. It dates back to the ancient worship of celestial stone. Although the consuetude of Shigandang of Mount Tai is changing with the time, it has great influence on the Chinese people’s spirit.

In ancient times, there are a lot of worship, one of which is “ Shigandang of Mount Tai”: Stones carved with characters of Shigandang of Mount Tai [泰山石敢当], which are three feet and three inches tall, standing at bridges, communications centres, or being built in the walls of a house, can suppress all evils, which is very popular among the people.

In June 2006, it was included in the first batch of national non-material cultural heritage list.

There is a beautiful legend in it:

Once there lived a young man whose name was Shigandang in a village at the foot of Mount Tai. He was very brave, and showed sympathy for the poor, always taking up the cudgels for the injured party.

A daughter of a family in the south of Tai’an City, who was haunted by a monstert, became sallow and emaciated, so her parent sent for Shigandang.

Shigandang used a spell to drive the monster away, but the monster went to other places to do evil.

Shigandang thought out a way: he asked the mason to carve on the stone his home and name– Shigandang of Mount Tai [泰山石敢当].The evil-haunted family would put this stone outside of their door, so the monster dared not go in.

Since then, the story of getting rid of the evil spirit by Shigandang of Mount Tai has spread far and wide. Therefore, people all carve the five Chinese characters of Shigandang of Mount Tai [泰山石敢当] in stones, and put them at the foot of a wall, in the street, road hub and bridge end to keep their village and home safe.

Thirdly, in this way we can introduce enterprises’ management to establish the campus culture fitting in with the corporate culture. We should gradually transfer from enrolling junior middle school students as the main, to enrolling senior high school students and college graduates, and to the training of employees, making it become a normal social phenomenon for college graduates to receive training in technical schools.

There are three beauties in Taian City of which the local people are proud: Chinese cabbage, tofu and Taishan spring water. Li Bai and Du Fu, two great poets of Tang Dynasty, had visited Taishan (Mt. Tai) for many times and tried out all sorts of dishes made from the three beauties.

Taishan tofu has a history of more than two thousand years. Tofu (豆腐) in Chinese implies the meaning of “All are happy”, and is also the symbol of happiness.

Snow-white and tender, Taishan tofu has some characteristics, such as high yield, high elasticity, delicious flavour and rich nutrition, and it is not easy to become hardened and broken after a long time cooking.

Furthermore, the groundwater used to make Taishan tofu comes from the springs of Taishan Mountain, which is known as “magic water of Taishan” for its freshness and sweetness. Hence, Taishan tofu is also called “magic tofu of Taishan”.

The particular making process of Taishan tofu includes simple grinding, fine grinding, cooking, adding gypsum, and shaping.

The concrete making method of Taishan tofu:

1. Simple grinding. Press the high-quality soybeans into soybean grits by the use of a stone roller which are produced in the North and carefully chosen.

2. Fine grinding. Put the soybean grits into water for half a day, grind them into milk in a stone roller, and squeeze the soybean milk out from the soybean milk bag.

3. Boiling the soybean milk. Put the soyabean milk in a large iron pot, boil the soybean milk by burning the fruit tree branches, and pour the boiled soybean milk into a big vat with the ladle.

4. Adding gypsum. Adding gypsum into the big vat of soybean milk. The white power on scale is gypsum, the key to turn soy milk into tofu.

5. Shaping. Put a piece of cloth on the bottom of the wooden bean curd mold, pour the jellied bean curd into the mold, cover it with a cloth, put the board on it, and press it with a stone.

泰山豆腐

泰安有三美：白菜、豆腐、水，指的就是泰山豆腐，泰安白菜和泰山泉水。李白和杜甫曾多次上泰山，并品尝”泰安三美“，有诗曰“游山不来品三美，泰山风光没赏全。”

泰山豆腐迄今已有两千多年的历史，豆腐寓意“都福”的意思,是福气的象征。

泰安豆腐好吃，做法也颇有讲究，制作经过分为碾糁、磨浆、煮浆、下膏、成型。泰安豆腐色白如雪，鲜嫩如乳，看着水汪汪且有弹性、久煮不老不碎、营养丰富等特点；还因所用的地下水来自泰山岩体裂隙流出的泉水，甘甜清冽，被古人誉为“泰山神水”；再就是出豆腐率高，非常神奇，故被称为“泰山神豆腐”。

泰山豆腐的制作工艺是:

1. 碾糁。精选北方优质黄豆,在石碾上压成豆糁;
2. 磨浆。将豆糁放入水中浸泡半天后,在石磨上磨制成浆,然后经过摋豆浆包挤压出浆;
3. 煮浆。将豆浆放在大铁锅里,用木柴最好是果树枝子烧煮豆浆,将煮熟的豆浆用瓢浇入大缸内;
4. 下膏。将浇入大缸内的豆浆“下膏”,让豆浆凝固成豆腐脑;
5. 成型。将木质的豆腐模具底部铺上一块布,将豆腐脑倒进模具里,上面再盖上布,放上木板,用石头压住。
