Today I would love to share a recipe of a super easy vegetarian rice fried with satay sauce. It’s not that typical satay dish of Southeast Asia, which I will show you another time.
Used to be called Fried Rice Queen by my co-workers, I always cook this lunch for a workday when it’s short of time and ingredients. Of course you can also fry the rice(better leftover rice as it’s drier and non-sticky) with other sauces/vegetables or without any sauce. I add meat cubes or sausage slices too when they are available. It’s simple, fast, tasty and pretty healthy. What else do you ask for? ;) So let’s get started!
今天来个最容易的炒饭分享,这里我不是要说怎么做那种南洋常见的沙嗲酱配肉串(这个下次聊),而是用现成的沙嗲酱来炒个蔬菜和剩饭(颗粒更分明,干爽不粘腻)。=)
因为非常简单粗暴快捷方便,我常常炒饭带去公司当午餐,被同事戏称为“炒饭女王” ;)。下面是我身边现有的原料,换成其他蔬菜也可以,比如蘑菇、青豆、西葫芦、玉米粒、胡萝卜等。加点鸡肉、猪肉、牛肉丁,或香肠、虾仁也很美味!
步骤:
先用大葱和洋葱爆过的热油炒鸡蛋(鸡蛋液里加点盐和黄酒调味),再入米饭一起大火快炒,加点盐和白胡椒粉(辣椒和鸡精可选,我有时候还加点耗油或姜黄粉,味道也不错)。最后加入黄瓜粒、豆芽和花生,这里可以再依个人口味加入喜欢的酱料(见下图),迅速翻炒一下就可以出锅啦!

Here’s the ingredients I used. Just use whatever vegetables you have at hand, such as mushrooms, zucchini, corns, carrots, peas…
I used cucumber and bean sprouts this time simply because I found these 2 in the fridge. :)

Preparation

Stir the eggs with a bit salt and Chinese yellow cooking wine(optional).
Mince the shallot onion, scallions(or chives/ciboulette) and chilies. Dice the cucumber into cubes.

First, sauté the minced onions and scallions in cooking oil. Leave the chilies for later (or never if you can’t bear the heat ;p), since they can get very hot and burned if fried too early.
Fry the stirred eggs in the onion&scallion flavored oil and scramble them.
When the scrambled eggs are almost done, add rice and toss to mix well.
Stir fry shortly in high heat, along with salt and white pepper (you can add turmeric powder or oyster sauce too).
At last, add the cucumber cubes, bean sprouts and peanuts, as they are not supposed to be cooked too much.

If you feel like eating something fresh, then it’s finished at this step (the photo above).
Or you can add satay sauce and more chilies in the next step like I did. (Sorry I forgot to take a photo of the sauce, ;p it’s just that kind of jarred one from Lee Kum Kee, which is easy to find in an Asian supermarket.)
Keep stir-frying:
喜欢清淡一点口味的,到上面这一步就可以了。我是个无可救药的重口味,所以又加了沙爹酱和辣椒🌶️。继续翻炒均匀:
